1 . Ginataang ube
2 . mag ipon ng kaunting kakang gata
3 . isalang ang kaunting gata at antayin kumulo
4 . ilagay ang ube at antayin itong lumambot
5 . ilagay ang asukal hanggang ito ay matunaw
6 . isunod ang kakang gata hanggang ito ay maluto
Kinilaw na Puso ng Saging
(Banana Flower Bud Salad)

Ingredients
• 1 medium-sized banana flower bud or puso ng saging, bracts removed and quartered (Musa × paradisiaca ’Saba’ variety or M. balbisiana)
• coconut cream or gata from 1 large mature coconut, 1st (thick) and 2nd (thin) extractions separated
• 1 thumb ginger or luya, crushed
• 1 pc medium bulb onion or sibuyas, chopped
• 3-4 pcs kalamansi
• 1/8 cup vinegar or suka
• Chillies or siling labuyo for heat
• Salt
Procedure
1. Boil puso ng saging chunks.
2. Drain and squeeze out latex and chop into small pieces.
3. Mix onions, ginger, vinegar and thick coconut milk in a bowl.
4. Add chopped puso ng saging and combine.
5. Add kalamansi and chilies.
6. Season with salt and combine well.
Ginataang Kamansi
(Kamansi Cooked in Coconut Cream)

Ingredients
• 1 fruit mature but unripe kamansi, peeled and chopped coarsely (Artocarpus camansi)
• coconut cream or gata from 1 large mature coconut, 1st (thick) and 2nd (thin) extractions separated
• 1 thumb turmeric or luyang dilaw, crushed
• 1 pc medium bulb onion or sibuyas, chopped
• 3 pcs medium tomatoes or kamatis, sliced
• ½ cup dried anchovies or dilis
• seasoning
Procedure
1. Mix onion, tomatoes and turmeric in a pot with thick coconut cream and bring to a boil.
2. Add sliced kamansi and mix until the coconut cream is boiling.
3. Add dilis and season as desired.
4. Cook until kamansi is tender.
