Tortang Inihaw na Talong

(Grilled Eggplant Omelet)

Ingredients

• 4 pcs medium eggplant or talong (Solanum melongena)
• 3 pcs large fresh eggs
• salt
• ¾ cup cooking oil
• Optional: 3 cloves garlic or bawang, 2 pcs medium tomatoes or kamatis and 1 small onion bulb, all minced/finely chopped

Procedure

1. Wash eggplants and grille over hot coals.
2. Allow to cool and peel off skin and burnt parts.
3. Beat eggs and season with salt.
4. Dip each piece of grilled eggplant into egg batter and mash slightly with a fork to allow the egg to seep into the eggplant flesh.
5. Fry each egg batter-drenched eggplant in oil until browned.
6. Optional: chopped garlic, tomatoes and onions can be added to the egg batter for enhanced aroma.

Procedure

1 . Sautee garlic, onion, tomato and bagoong in oil. Pour water and simmer for 10 minutes.
2 . Add kalabasa, okra and sitaw in 2-minute intervals.
3 . Add ampalaya and eggplant and simmer for 5 minutes.
4 . Transfer on a serving plate and serve.
