(Boiled Heart of Footstool Palm)

Ingredients

• heart of footstool palm or ubod ng anahaw (Saribus rotundifolius)
• fermented fish paste or bagoong; alternatively, shrimp paste or alamang
• kalamansi or local lime (dayap)

Procedure

1. Boil chopped pieces of heart of palm or ubod and drain.
2. Season with bagoong/alamang and dayap or kalamansi juice.
3. Alternatively, boiled ubod can be served plain, but paired with a dip of kalamansi/dapap and bagoong/alamang.
